Ingredients:
- 1 Block Extra Firm Tofu
- 2 Tsp garlic powder
- 1 Tbsp Tamari/Soy Sauce
- 1 Cucumber
- 1 Red pepper
- 2 Carrots
- Red cabbage
- 1 Avocado
- Mixed Greens
- 2 Cups Rice (Dry)
Sauce:
- 1 Tbsp rice vinegar
- 4 Tbsp maple syrup
- 2 Tbsp tomato paste
- 3 Tbsp soy sauce
- 2 Tsp sesame oil
- 3 Tsp chili powder
- 1 Tsp cornstarch
- 1/2 Scoop Profi Protein Booster
- 1 Tbsp Sriracha
Directions:
- Bring a pot of water to a boil & add rice. Cook until tender.
- Chop tofu into cubes and toss in tamari/soy sauce & garlic powder and bake in oven at 420 until crisp (about 20 min)
- While rice and tofu are cooking, chop your cucumber, red pepper and cabbage, use a vegetable peeler to peel little strips of the carrot
- Place sauce ingredients in a small pot and bring to boil stirring frequently and then simmer until ready to serve
- Lay down a bed of greens, top with rice, veggies, tofu and sauce
- Slice avocado last so it does not go bad, put it on and EAT!
