Ingredients:

Slaw:

2-3 Cups shredded purple cabbage (Tip: pulse in food processor!)
1/2 Cup green pepper, diced
1 Jalapeño pepper, finely chopped
1/2 Whole red onion, finely chopped
1/4 Cup fresh cilantro, roughly chopped
2 Tbsp lime juice
Salt and pepper to taste

“Fish”:

1 Package extra firm tofu, pressed and chopped into desired chunks
1 Tbsp cumin
1 Tbsp chili powder
1 Tsp chili flakes
1/2 Tsp cayenne powder
1 Tbsp coconut oil

Toppings:
1 Ripe avocado, diced
1/2 Tomato, diced
Green salsa
Hot sauce

Directions:

Slaw:

  1. Combine all slaw ingredients and marinate while tofu is being pressed

Fish:

  1. Mix all spices in container, add in tofu chunks and toss until well coated
  2. Melt coconut oil in large skillet over medium heat, add seasoned tofu and cook all sides evenly for best texture
  3. Assemble tacos with slaw, seasoned tofu and additional salsa or hot sauce, avocado and tomato or serve as taco salad!
